I had posted a quick and easy pasta recipe (on my Instagram and Facebook page) which grabbed quite a few eyeballs and some friends asked me about it. “Why is this dish not up on your blog? It looks fantastic! We need easy and quick recipes like this.” And if I know myself, I am always willing to help others. So let’s jump right into the recipe of this super easy no-sauce pasta dish.
Brown rice spaghetti – 1 lb or less (use any brand, I used Trader Joe’s Brown Rice and Quinoa Spaghetti)
1 bell pepper, 2 cups spinach
1 cup broccoli florets
1 cup mushrooms (washed thoroughly and halved)
2 chicken sausages cut in small pieces (you can use your favorite, I used Trader Joe’s Korean BBQ)
1-2 tbsp olive oil
salt and pepper (according to taste)
2 tsp dried parsley
some fresh basil leaves (optional)
1) Boil the spaghetti in water with a bit of salt and a dash of olive oil. 2 mins before removing add the broccoli florets, strain the pasta and broccoli and run it in cold water.
2) In a pan on medium-high heat, heat 1 tbsp of olive oil, add the sausages and mushrooms, saute for a few mins, add the broccoli and pasta with salt and pepper. (I tend to add lots of pepper)
3)Then add the bell pepper and spinach and stir well in medium-high heat. Now add dried parsley and basil and give it a final stir. Your one pot healthy no-sauce pasta meal is ready in no time! Enjoy!
Instead of chicken sausages you can use grilled chicken strips or boiled shredded chicken.
You can also substitute brown rice pasta with whole wheat spaghetti. Also, any vegetables are welcome in this dish. You don’t Have to use only the listed ones here.
