Coconut Crepes with Mango, Strawberry and Honey Recipe

A healthy and yummy Crêpe recipe with fruits thats perfect for breakfast or brunch

After trying my hand at cooking and making different kinds of food, I’ve come to realize that to cook food that looks great on the plate and is also delicious does not necessarily have to take up a whole lot of time. This is one of them. An inspired recipe that can be a meal or a dessert, Coconut milk Crêpes is healthy and a treat for your palate with Greek yogurt and almost any kind of fruit. 


One blog that has caught my attention is Sugar et al. I chose to recreate Sonali’s Coconut Crepes but wanted to add my own little dimension to it, so I tweaked the recipe to meet my needs.

There are times when we want to eat something extra nice on weekends. Mangoes are still available in some stores here. Therefore, Coconut milk Crepes with Mangoes and Strawberries seemed perfect on a warm (actually, hot) summer day for brunch.

{Makes 6-7 crepes}

Ingredients you will need:

½ cup all purpose flour, sifted
⅔  cup coconut milk (store bought or freshly made)
2 eggs, lightly whisked
3 tbsp butter, melted
1 ½-2 cups Greek yogurt 
2-3 cups mangoes, chopped into cubes
2 cups strawberries, chopped (you can use other berries too)
2 tbsp sugar (granulated/castor)
1 tbsp oil
Honey

Method for cooking:

1) In a bowl, whip the greek yogurt and sugar well. Keep aside. (You can adjust the measurement of yogurt and sugar depending on your taste and how much crepe filling you want)

2) In a large bowl, mix the flour, eggs, melted butter and coconut milk. Ensure there are no lumps. Let this mixture stand for 20 mins.

3) Soak a part of a paper towel with oil and rub it on the pan lightly to grease it and bring it to heat. Once hot, add 4-5 tbsp of batter and swirl the pan, evenly spreading the batter on the base. Cook until edges are brown. If you want it to be crispy on the edges, add few drops of melted butter while it’s cooking. Flip the crepe and cook the other side for a couple of more minutes.

4) Serve on a plate and let it cool a bit. Continue Step 3. with the rest of the better.

5) Add the sweetened yogurt on one half of the crepe, add mangoes and berries and fold with the other half, to form a semicircle. Drizzle with honey and serve.
